Hearty Pot Roast

Ingredients
- 3 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 carrots, cut into 1-inch pieces
- 3 stalks celery, cut into 1-inch pieces
- 2 cups beef broth
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 1 bay leaf
- 1 pound baby potatoes
Method
- Preheat your oven to 325°F (165°C).
- Season the beef chuck roast with salt and black pepper.
- Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, about 8-10 minutes total.
- Remove the roast and set aside. In the same pot, add chopped onion and minced garlic. Sauté for 3-4 minutes until soft.
- Stir in carrots and celery, cooking for an additional 2-3 minutes.
- Add beef broth, tomato paste, dried thyme, and bay leaf. Stir to combine, then return the roast to the pot.
- Cover the pot and place it in the preheated oven. Roast for 2 hours.
- Add baby potatoes to the pot, cover, and continue to roast for another 1 hour, or until the beef and vegetables are tender.
- Remove the bay leaf before serving. Slice the beef and serve with the vegetables and cooking liquid.
