Hearty Pot Roast

Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, cut into 1-inch pieces
  • 3 stalks celery, cut into 1-inch pieces
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • 1 pound baby potatoes

Method

  1. Preheat your oven to 325°F (165°C).
  2. Season the beef chuck roast with salt and black pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, about 8-10 minutes total.
  4. Remove the roast and set aside. In the same pot, add chopped onion and minced garlic. Sauté for 3-4 minutes until soft.
  5. Stir in carrots and celery, cooking for an additional 2-3 minutes.
  6. Add beef broth, tomato paste, dried thyme, and bay leaf. Stir to combine, then return the roast to the pot.
  7. Cover the pot and place it in the preheated oven. Roast for 2 hours.
  8. Add baby potatoes to the pot, cover, and continue to roast for another 1 hour, or until the beef and vegetables are tender.
  9. Remove the bay leaf before serving. Slice the beef and serve with the vegetables and cooking liquid.
