Hearty One-Pot Chili

This hearty one-pot chili is perfect for any day of the week. Using common pantry staples, it's an easy and delicious meal that will keep you coming back for more.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 pound ground beef
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 (28-ounce) can diced tomatoes
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 2 cups beef broth
  • Salt, to taste
  • Black pepper, to taste

Method

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and chopped bell pepper, cooking for another 2 minutes.
  4. Add the ground beef, breaking it up with a spoon, and cook until browned.
  5. Mix in the chili powder, cumin, smoked paprika, and oregano, and cook for 1 minute.
  6. Pour in the diced tomatoes, kidney beans, black beans, and beef broth. Stir to combine.
  7. Bring the chili to a boil, then reduce the heat to low and let it simmer uncovered for 60 minutes, stirring occasionally.
  8. Season the chili with salt and black pepper to taste before serving.
