Hearty One-Pan Chili

Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 1/2 pounds ground beef
- 1 red bell pepper, diced
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (28 ounces) crushed tomatoes
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup beef broth
- 1 cup frozen corn
- Flaky sea salt, to taste
Method
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook until the beef is browned, breaking it apart with a spoon.
- Add the diced red bell pepper, chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Stir well to combine.
- Pour in the crushed tomatoes, kidney beans, black beans, and beef broth. Stir to combine all ingredients.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for 45 minutes, stirring occasionally.
- Add the frozen corn, stir, and cook for an additional 10 minutes.
- Taste and adjust seasoning with flaky sea salt, if needed.
- Serve hot, garnished with your favorite toppings or as is.
