Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 pounds ground beef
  • 1 red bell pepper, diced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup beef broth
  • 1 cup frozen corn
  • Flaky sea salt, to taste

Method

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until the beef is browned, breaking it apart with a spoon.
  4. Add the diced red bell pepper, chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Stir well to combine.
  5. Pour in the crushed tomatoes, kidney beans, black beans, and beef broth. Stir to combine all ingredients.
  6. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for 45 minutes, stirring occasionally.
  7. Add the frozen corn, stir, and cook for an additional 10 minutes.
  8. Taste and adjust seasoning with flaky sea salt, if needed.
  9. Serve hot, garnished with your favorite toppings or as is.
