Hearty Nordic Salmon Salad

This hearty salmon salad is perfect for a light yet filling meal. It's packed with fresh vegetables and features a zesty dill dressing that's sure to delight your taste buds. Ideal for a spring lunch or dinner!

Ingredients

  • 2 tablespoons olive oil
  • 1 pound salmon fillets
  • 1 tablespoon lemon juice
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • 6 cups mixed salad greens
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup radishes, thinly sliced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons capers, drained

Method

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and lemon juice, and season with sea salt and black pepper.
  3. Bake the salmon in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.
  4. While the salmon is baking, prepare the salad. In a large bowl, combine the mixed salad greens, cucumber, radishes, fresh dill, and capers.
  5. Once the salmon is cooked, allow it to cool slightly. Break it into large chunks and add to the salad.
  6. Toss the salad gently to combine all ingredients. Adjust seasoning with additional sea salt and black pepper if desired.
  7. Serve immediately as a main dish, enjoying the fresh, zesty flavors.
