Hearty Nordic Salmon Salad
This hearty salmon salad is perfect for a light yet filling meal. It's packed with fresh vegetables and features a zesty dill dressing that's sure to delight your taste buds. Ideal for a spring lunch or dinner!
Ingredients
- 2 tablespoons olive oil
- 1 pound salmon fillets
- 1 tablespoon lemon juice
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
- 6 cups mixed salad greens
- 1/2 cup cucumber, thinly sliced
- 1/4 cup radishes, thinly sliced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons capers, drained
Method
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and lemon juice, and season with sea salt and black pepper.
- Bake the salmon in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.
- While the salmon is baking, prepare the salad. In a large bowl, combine the mixed salad greens, cucumber, radishes, fresh dill, and capers.
- Once the salmon is cooked, allow it to cool slightly. Break it into large chunks and add to the salad.
- Toss the salad gently to combine all ingredients. Adjust seasoning with additional sea salt and black pepper if desired.
- Serve immediately as a main dish, enjoying the fresh, zesty flavors.
