Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breast, cut into bite-sized pieces
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 4 cups mixed salad greens
  • 1/2 cup cooked quinoa
  • 1/4 cup chopped almonds
  • 1/4 cup crumbled feta cheese
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chicken pieces to the skillet and season with cumin, coriander, paprika, salt, and pepper. Cook until the chicken is cooked through, about 8-10 minutes.
  3. In a large bowl, combine the mixed salad greens, cooked quinoa, chopped almonds, and crumbled feta cheese.
  4. Add the cooked chicken to the salad bowl and toss gently to combine all ingredients.
  5. Taste and adjust seasoning with additional salt and pepper, if necessary. Serve immediately.
