Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/4 cup unsweetened ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dried thyme
  • Olive oil, for greasing

Method

  1. Preheat the oven to 375°F (190°C) and lightly grease a loaf pan with olive oil.
  2. In a large bowl, combine ground beef, almond flour, Parmesan cheese, onion, garlic, eggs, ketchup, Worcestershire sauce, mustard, salt, pepper, and thyme.
  3. Mix the ingredients thoroughly with your hands until well combined but do not overmix.
  4. Transfer the mixture to the prepared loaf pan and press it down evenly.
  5. Bake the meatloaf in the preheated oven for 60 minutes or until the internal temperature reaches 160°F (71°C).
  6. Let the meatloaf rest for 10 minutes before slicing. Serve warm.
