Hearty Korean-Inspired Chicken Salad

Ingredients
- 1 pound boneless, skinless chicken breast
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 clove garlic, minced
- 4 cups mixed salad greens
- 1 cucumber, sliced
- 1/4 cup chopped green onions
Method
- Preheat a grill or skillet over medium heat.
- In a small bowl, combine the soy sauce, sesame oil, rice vinegar, and minced garlic. Mix well to create a marinade.
- Place the chicken breasts in a shallow dish and pour the marinade over them. Let it sit for about 5 minutes.
