Hearty Grilled Chicken Salad
This Hearty Grilled Chicken Salad is perfect for a summer dinner. It's easy to make and full of flavor, with fresh vegetables and a light dressing that will leave you feeling satisfied.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 large head of romaine lettuce, chopped
- 1 pint cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 cup Spanish olives, sliced
- 1 tablespoon balsamic vinegar
- Salt and pepper, to taste
Method
- Preheat the grill to medium-high heat.
- Rub the chicken breasts with 1 tablespoon of olive oil, smoked paprika, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side, or until cooked through and juices run clear.
- While the chicken is grilling, in a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, and Spanish olives.
- In a small bowl, whisk together the remaining olive oil and balsamic vinegar. Season with salt and pepper to taste.
- Slice the grilled chicken and toss it with the salad. Drizzle with the balsamic dressing and serve immediately.
