Hearty Greek Chicken Salad

Ingredients
- 2 tablespoons olive oil
- 1 pound boneless chicken breast, cut into strips
- 1 teaspoon dried oregano
- 3 cups mixed salad greens
- 1/2 cup cucumber, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup pitted Kalamata olives, sliced
- 1/4 cup crumbled feta cheese
- 1 tablespoon red wine vinegar
- Flaky sea salt, to taste
- Black pepper, to taste
Method
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Season the chicken strips with dried oregano, salt, and pepper.
- Add the chicken to the skillet and cook for 5-7 minutes, turning occasionally, until fully cooked and golden brown.
