Hearty Greek Chicken Salad

This hearty Greek chicken salad combines crisp vegetables with tender chicken and a sprinkle of creamy feta. It's quick to make and packed with flavor, making it a perfect choice for a cozy winter meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless chicken breast, cut into strips
  • 1 teaspoon dried oregano
  • 3 cups mixed salad greens
  • 1/2 cup cucumber, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup pitted Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon red wine vinegar
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Season the chicken strips with dried oregano, salt, and pepper.
  3. Add the chicken to the skillet and cook for 5-7 minutes, turning occasionally, until fully cooked and golden brown.
  4. In a large bowl, combine the salad greens, cucumber, cherry tomatoes, and olives.
  5. Add the cooked chicken strips to the salad.
  6. Drizzle with remaining olive oil and red wine vinegar, then toss to combine.
  7. Top with crumbled feta cheese, and season with additional salt and pepper to taste before serving.
