Hearty Chicken and Kale Salad

This hearty chicken and kale salad is perfect for a chilly winter evening. Packed with protein and greens, it's both satisfying and delicious. A hint of Korean sesame dressing adds a subtle twist.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless chicken breast, sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups kale, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sesame dressing
  • 1 tablespoon sesame seeds

Method

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Season the sliced chicken breast with salt and pepper.
  3. Cook the chicken in the skillet for 6-8 minutes until fully cooked, then set aside.
  4. In a large bowl, combine chopped kale and cherry tomatoes.
  5. Add the cooked chicken to the kale and tomatoes.
  6. Drizzle with sesame dressing and toss to combine.
  7. Sprinkle with sesame seeds before serving.
