Hearty Beef Stew

This hearty beef stew is perfect for a cozy dinner and is made in a single pan for easy cleanup. It's loaded with tender beef, potatoes, and carrots, making it a comforting meal you can enjoy any time of the year.

Ingredients

  • 2 tablespoons olive oil
  • 2 pounds beef chuck, cut into 1-inch cubes
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 pound potatoes, peeled and diced
  • 3 carrots, sliced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 cup frozen peas

Method

  1. Heat olive oil in a large pot over medium-high heat. Season beef cubes with salt and pepper.
  2. Add beef to the pot in batches, searing until browned on all sides. Remove and set aside.
  3. In the same pot, add onion and garlic. Sauté until onion is translucent, about 5 minutes.
  4. Stir in flour and cook for 1 minute until lightly browned.
  5. Gradually whisk in beef broth and tomato paste, scraping up any browned bits from the bottom of the pot.
  6. Return the beef to the pot along with potatoes, carrots, bay leaves, and thyme.
  7. Bring to a simmer, then cover and reduce heat to low. Cook for 1 1/2 hours, stirring occasionally.
  8. Add frozen peas and cook for an additional 10 minutes. Adjust seasoning with salt and pepper to taste.
  9. Remove bay leaves and serve warm.
