Hearty Beef Stew
This hearty beef stew is perfect for a cozy dinner and is made in a single pan for easy cleanup. It's loaded with tender beef, potatoes, and carrots, making it a comforting meal you can enjoy any time of the year.
Ingredients
- 2 tablespoons olive oil
- 2 pounds beef chuck, cut into 1-inch cubes
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 pound potatoes, peeled and diced
- 3 carrots, sliced
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 cup frozen peas
Method
- Heat olive oil in a large pot over medium-high heat. Season beef cubes with salt and pepper.
- Add beef to the pot in batches, searing until browned on all sides. Remove and set aside.
- In the same pot, add onion and garlic. Sauté until onion is translucent, about 5 minutes.
- Stir in flour and cook for 1 minute until lightly browned.
- Gradually whisk in beef broth and tomato paste, scraping up any browned bits from the bottom of the pot.
- Return the beef to the pot along with potatoes, carrots, bay leaves, and thyme.
- Bring to a simmer, then cover and reduce heat to low. Cook for 1 1/2 hours, stirring occasionally.
- Add frozen peas and cook for an additional 10 minutes. Adjust seasoning with salt and pepper to taste.
- Remove bay leaves and serve warm.
