Hearty Beef Chili
This hearty beef chili is perfect for a family dinner or weekend gathering. Packed with rich flavors and just the right amount of spice, it's a dish that warms the soul.
Ingredients
- 2 tablespoons olive oil
- 1 1/2 pounds ground beef
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tablespoons tomato paste
- 1 can (28 ounces) diced tomatoes
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper, to taste
- 1 cup beef broth
- 1/4 cup fresh cilantro, chopped
- Shredded cheddar cheese, for serving
Method
- In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
- Add the diced onion, minced garlic, and diced bell peppers to the pot. Cook for about 5 minutes until the vegetables are softened.
- Stir in the tomato paste, chili powder, cumin, smoked paprika, and cayenne pepper. Cook for an additional 2 minutes.
- Add the diced tomatoes, kidney beans, black beans, and beef broth. Stir well to combine.
- Bring the chili to a boil, then reduce the heat to low. Cover and simmer for 1 to 1.5 hours, stirring occasionally, until the flavors meld together.
- Season the chili with salt and pepper to taste. Stir in the fresh cilantro before serving.
- Serve hot, garnished with shredded cheddar cheese, if desired.
