Hearty Beef and Bean Chili

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup beef broth
  • Flaky sea salt, to taste
  • Chopped fresh cilantro, for serving

Method

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté for about 5 minutes until the onion becomes translucent.
  2. Add the ground beef to the pot and cook until browned, breaking it apart with a spoon, about 8-10 minutes.
  3. Stir in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook for an additional 2 minutes, allowing the spices to become fragrant.
  4. Pour in the crushed tomatoes, kidney beans, black beans, and beef broth. Stir to combine all ingredients.
  5. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let the chili cook gently for about 45 minutes, stirring occasionally.
  6. Taste and adjust seasoning with flaky sea salt as needed. Once done, serve the chili hot, garnished with chopped fresh cilantro if desired.
