Healthy Chicken and Rice Bowl

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into small cubes
  • 1 teaspoon garlic powder
  • Flaky sea salt, to taste
  • Black pepper, to taste
  • 1 cup uncooked brown rice
  • 2 cups water
  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 1 red bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced

Method

  1. In a medium saucepan, bring 2 cups of water to a boil. Add the brown rice, reduce heat to low, cover, and simmer for 30-35 minutes until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  2. While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken cubes with garlic powder, salt, and pepper.
  3. Add the chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown. Transfer to a plate and set aside.
  4. In the same skillet, add the remaining 1 tablespoon of olive oil. Add the asparagus and red bell pepper, and sauté for 4-5 minutes until the vegetables are tender-crisp.
  5. Return the chicken to the skillet and add the cooked rice. Stir to combine everything well, and cook for another 2-3 minutes until heated through.
  6. Remove from heat, stir in the chopped parsley and lemon juice. Adjust seasoning with salt and pepper if needed.
  7. Serve the chicken and rice mixture warm in bowls, garnished with additional parsley if desired.
