Grilled Vegetable Tostadas with Avocado Crema

Ingredients
- 8 small corn tostadas
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 small red onion, sliced
- 1 cup cherry tomatoes, halved
- Flaky sea salt, to taste
- Black pepper, to taste
- 2 ripe avocados, peeled and pitted
- 1 lime, juiced
- 1/4 cup fresh cilantro leaves
- 1/4 teaspoon ground cumin
- Olive oil, for drizzling
Method
- Preheat a grill or grill pan over medium-high heat.
- In a bowl, toss the red bell pepper, zucchini, red onion, and cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper.
- Grill the vegetables for 5-7 minutes, turning occasionally, until charred and tender.
