Ingredients

  • 2 medium zucchinis, sliced into 1/4 inch rounds
  • 2 medium red bell peppers, seeded and cut into strips
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon olive oil, for dressing
  • Flaky sea salt, to taste

Method

  1. Preheat a grill or grill pan over medium-high heat.
  2. In a large bowl, toss the zucchini, bell peppers, and cherry tomatoes with 1 tablespoon olive oil, salt, and black pepper.
  3. Grill the vegetables in a single layer for about 5-7 minutes, turning occasionally, until tender and slightly charred.
  4. While the vegetables are grilling, prepare the dressing by whisking together the lemon juice, parsley, basil, and 1 tablespoon olive oil in a small bowl.
  5. Remove the vegetables from the grill and transfer to a serving bowl.
  6. Drizzle the lemon herb dressing over the grilled vegetables and toss gently to combine. Adjust seasoning with flaky sea salt to taste.
