Grilled Chicken with Vegetables
Enjoy a light and healthy grilled chicken with vegetables dish that is perfect for a spring dinner. The slightly smoky flavor from the grill complements the fresh vegetables beautifully.
Ingredients
- 1 1/2 pounds boneless chicken breasts
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- Flaky sea salt, to taste
- Ground black pepper, to taste
Method
- Preheat your grill to medium-high heat.
- In a small bowl, mix 2 tablespoons of olive oil, minced garlic, and smoked paprika. Rub the mixture over the chicken breasts and season with salt and pepper.
- Toss the sliced red bell pepper, zucchini, and cherry tomatoes in the remaining tablespoon of olive oil, and season with salt and pepper.
- Place the chicken on the grill and cook for 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Add the vegetables to the grill and cook for 5-7 minutes, turning occasionally, until they are tender and have grill marks.
- Remove the chicken and vegetables from the grill. Let the chicken rest for a few minutes before slicing.
- Serve the sliced chicken with the grilled vegetables. Enjoy!
