Grilled Chicken with Vegetables

Enjoy a light and healthy grilled chicken with vegetables dish that is perfect for a spring dinner. The slightly smoky flavor from the grill complements the fresh vegetables beautifully.

Ingredients

  • 1 1/2 pounds boneless chicken breasts
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • Flaky sea salt, to taste
  • Ground black pepper, to taste

Method

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix 2 tablespoons of olive oil, minced garlic, and smoked paprika. Rub the mixture over the chicken breasts and season with salt and pepper.
  3. Toss the sliced red bell pepper, zucchini, and cherry tomatoes in the remaining tablespoon of olive oil, and season with salt and pepper.
  4. Place the chicken on the grill and cook for 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  5. Add the vegetables to the grill and cook for 5-7 minutes, turning occasionally, until they are tender and have grill marks.
  6. Remove the chicken and vegetables from the grill. Let the chicken rest for a few minutes before slicing.
  7. Serve the sliced chicken with the grilled vegetables. Enjoy!
