Grilled Chicken with Mixed Vegetables

Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 2 cups cherry tomatoes
- 1 large red bell pepper, sliced
- 1 large zucchini, sliced
- Salt and pepper, to taste
Method
- Preheat your grill to medium-high heat.
- In a small bowl, mix the olive oil, oregano, garlic powder, salt, and pepper. Rub the mixture over the chicken breasts, coating them evenly.
- Place the chicken on the grill and cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- While the chicken is grilling, toss the cherry tomatoes, red bell pepper, and zucchini in a little olive oil, salt, and pepper.
- Place the vegetables on the grill and cook for 5-7 minutes, turning occasionally, until charred and tender.
- Remove the chicken and vegetables from the grill. Let the chicken rest for a few minutes before slicing.
