Grilled Chicken with Mixed Vegetables

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 2 cups cherry tomatoes
  • 1 large red bell pepper, sliced
  • 1 large zucchini, sliced
  • Salt and pepper, to taste

Method

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix the olive oil, oregano, garlic powder, salt, and pepper. Rub the mixture over the chicken breasts, coating them evenly.
  3. Place the chicken on the grill and cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  4. While the chicken is grilling, toss the cherry tomatoes, red bell pepper, and zucchini in a little olive oil, salt, and pepper.
  5. Place the vegetables on the grill and cook for 5-7 minutes, turning occasionally, until charred and tender.
  6. Remove the chicken and vegetables from the grill. Let the chicken rest for a few minutes before slicing.
  7. Serve the grilled chicken with the vegetables on a platter. Enjoy your meal!
