Grilled Chicken Winter Salad

This grilled chicken winter salad brings together comforting flavors with a hint of Chinese flair. Perfect for a cozy night in or a healthy weekend meal.

Ingredients

  • 1 pound boneless chicken breasts
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon olive oil
  • 8 cups mixed winter greens (such as kale, spinach, and arugula)
  • 1/2 cup roasted peanuts
  • 1/4 cup shredded carrots
  • 2 scallions, sliced
  • 2 tablespoons rice vinegar
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Preheat a grill pan over medium heat. Season the chicken breasts with soy sauce, sesame oil, salt, and pepper.
  2. Grill the chicken for 6-7 minutes on each side, or until fully cooked and lightly charred. Remove from the heat and let it rest for a few minutes.
  3. Slice the chicken into strips.
  4. In a large mixing bowl, combine the winter greens, roasted peanuts, shredded carrots, and scallions.
  5. In a small bowl, whisk together olive oil and rice vinegar. Season with salt and pepper to taste.
  6. Pour the dressing over the salad and toss to combine.
  7. Top the salad with the sliced grilled chicken and serve immediately.
