Grilled Chicken Salad
This Grilled Chicken Salad is a simple, healthy meal perfect for spring. Fresh greens and grilled chicken make it satisfying and flavorful.
Ingredients
- 1 pound boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 cups mixed baby greens
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/4 cup crumbled feta cheese
Method
- Preheat a grill or grill pan over medium-high heat.
- Rub the chicken breasts with 1 tablespoon of olive oil, salt, and black pepper.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let rest for 5 minutes.
- In a large bowl, combine the mixed baby greens, cherry tomatoes, and cucumber. Drizzle with the remaining olive oil and toss gently.
- Slice the grilled chicken breasts and place them on top of the salad.
- Sprinkle the crumbled feta cheese over the salad and serve immediately.
