Grilled Chicken and Farro Bowl
This cozy grain bowl features nutritious farro and tender grilled chicken, perfect for a winter dinner. The light broth brings comforting flavors without being heavy.
Ingredients
- 1 cup farro
- 2 cups chicken broth
- 1 pound boneless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon dried Italian herbs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
Method
- Rinse the farro under cold water. In a saucepan, combine the farro and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until farro is tender.
- While the farro is cooking, season the chicken breasts with olive oil, Italian herbs, salt, and pepper.
- Heat a grill pan over medium-high heat. Grill the chicken for about 6-7 minutes per side, until fully cooked. Remove from heat and let rest for a few minutes.
- Slice the grilled chicken. In serving bowls, place cooked farro, top with sliced chicken, and add cherry tomatoes.
- Sprinkle with grated Parmesan cheese before serving.
