Grilled Chicken and Farro Bowl

Ingredients

  • 1 cup farro
  • 2 cups chicken broth
  • 1 pound boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese

Method

  1. Rinse the farro under cold water. In a saucepan, combine the farro and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until farro is tender.
  2. While the farro is cooking, season the chicken breasts with olive oil, Italian herbs, salt, and pepper.
  3. Heat a grill pan over medium-high heat. Grill the chicken for about 6-7 minutes per side, until fully cooked. Remove from heat and let rest for a few minutes.
  4. Slice the grilled chicken. In serving bowls, place cooked farro, top with sliced chicken, and add cherry tomatoes.
  5. Sprinkle with grated Parmesan cheese before serving.
