Grilled Chicken and Couscous Bowl
This Grilled Chicken and Couscous Bowl is both delicious and easy to make, perfect for a satisfying weeknight dinner. A hint of Moroccan spice adds a unique twist to this healthy, balanced meal.
Ingredients
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken breasts, cut into strips
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 cup couscous
- 1 1/4 cups chicken broth
- 1 large cucumber, diced
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
- Lemon wedges, for serving
Method
- In a large bowl, combine olive oil, ground cumin, smoked paprika, salt, and pepper. Add chicken strips and toss to coat evenly. Let marinate for at least 10 minutes.
- While the chicken is marinating, bring chicken broth to a boil in a small saucepan. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- Preheat a grill or grill pan over medium-high heat. Cook the marinated chicken strips for 4-5 minutes per side, or until cooked through and lightly charred.
- Divide the couscous among four bowls. Top with grilled chicken, diced cucumber, and chopped parsley.
- Serve with lemon wedges on the side for squeezing over the top.
