Grilled Chicken and Avocado Salad
This Grilled Chicken and Avocado Salad is perfect for a winter dinner. Packed with protein and healthy fats, it's simple to prepare and sure to satisfy.
Ingredients
- 2 tablespoons olive oil
- 1 pound boneless chicken breasts
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 2 large avocados, sliced
- 8 cups mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled queso fresco
- Salt and pepper, to taste
Method
- Preheat a grill or grill pan over medium-high heat and brush it with olive oil.
- In a small bowl, mix the ground cumin, chili powder, salt, and pepper. Rub this mixture over the chicken breasts.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F. Remove and let rest.
- Slice the cooked chicken into strips.
- In a large bowl, combine the mixed salad greens, sliced avocados, cherry tomatoes, and grilled chicken.
- Sprinkle the salad with crumbled queso fresco. Drizzle with additional olive oil if desired, and season with salt and pepper to taste.
- Toss gently and serve immediately.
