Ingredients

  • 4 cups watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, torn
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. In a large bowl, combine the watermelon cubes and crumbled feta cheese.
  2. Add the torn mint leaves to the bowl.
  3. In a small bowl, whisk together the extra virgin olive oil and fresh lemon juice.
