Greek Chicken Salad with Brothy Vinaigrette

This Greek chicken salad is a perfect blend of fresh ingredients and a light, brothy vinaigrette that brings a cozy touch to winter evenings. Great for a healthy, satisfying meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice

Method

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Season the chicken strips with dried oregano, salt, and black pepper.
  3. Add the chicken to the skillet and cook for 5-7 minutes, until golden and cooked through. Remove from heat and set aside.
  4. In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, and kalamata olives.
  5. In a small saucepan, gently heat the chicken broth and lemon juice until warm. This will be your light brothy vinaigrette.
  6. Toss the salad with the warm brothy vinaigrette.
  7. Top the salad with cooked chicken and sprinkle with crumbled feta cheese.
  8. Serve immediately for a refreshing and warm meal.
