Greek Chicken Salad

Ingredients
- 1 pound boneless chicken breast
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 2 cups cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled
- Flaky sea salt, to taste
- Black pepper, to taste
Method
- Preheat a grill or grill pan over medium-high heat.
- Brush the chicken breasts with 1 tablespoon of olive oil and sprinkle with dried oregano, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let rest for a few minutes before slicing.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, and Kalamata olives.
- Add the grilled chicken slices to the bowl and drizzle with the remaining olive oil. Toss gently to combine.
