Garlic Butter Roast Chicken

Ingredients
- 1 whole chicken, about 4 pounds
- 4 tablespoons unsalted butter, softened
- 6 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon fresh thyme leaves
- 1 lemon, thickly sliced
- Fresh parsley, for garnish
Method
- Preheat the oven to 425°F (220°C).
- Pat the chicken dry with paper towels and place it in a large roasting pan.
- In a small bowl, mix the softened butter, minced garlic, olive oil, lemon juice, salt, pepper, and thyme leaves to form a paste.
- Gently separate the skin from the chicken breast and rub some of the butter mixture under the skin. Rub the remaining mixture over the entire chicken.
- Place the lemon slices inside the cavity of the chicken.
- Tie the legs together with kitchen twine and tuck the wings under the body.
- Roast the chicken in the preheated oven for about 1 1/2 hours, or until the internal temperature reaches 165°F (74°C) and the juices run clear when the thigh is pierced.
- Remove the chicken from the oven and let it rest for 15 minutes before carving. Garnish with fresh parsley before serving.
