Garlic Butter Roast Chicken

This garlic butter roast chicken is the perfect comforting dish for a cozy winter dinner with family. It's rich in flavor, easy to prepare, and sure to become a staple in your household.

Ingredients

  • 1 whole chicken, about 4 pounds
  • 4 tablespoons unsalted butter, softened
  • 6 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves
  • 1 lemon, thickly sliced
  • Fresh parsley, for garnish

Method

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and place it in a large roasting pan.
  3. In a small bowl, mix the softened butter, minced garlic, olive oil, lemon juice, salt, pepper, and thyme leaves to form a paste.
  4. Gently separate the skin from the chicken breast and rub some of the butter mixture under the skin. Rub the remaining mixture over the entire chicken.
  5. Place the lemon slices inside the cavity of the chicken.
  6. Tie the legs together with kitchen twine and tuck the wings under the body.
  7. Roast the chicken in the preheated oven for about 1 1/2 hours, or until the internal temperature reaches 165°F (74°C) and the juices run clear when the thigh is pierced.
  8. Remove the chicken from the oven and let it rest for 15 minutes before carving. Garnish with fresh parsley before serving.
