This fudgy brownie layer cake brings a delightful twist to the classic treat. It's easy to make, and its rich, chocolatey flavor is perfect for a summer dessert. Serve it as is, or with a scoop of vanilla ice cream for an extra indulgence.

Ingredients

  • 1 cup unsalted butter, melted
  • 1 1/2 cups granulated sugar
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract

Method

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a large bowl, whisk together the melted butter and sugar until combined.
  3. Add the eggs and vanilla extract to the butter mixture, and whisk until smooth.
  4. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake for 20-25 minutes, until the edges are firm and a toothpick inserted into the center comes out mostly clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely before slicing and serving.
