French Winter Vegetable Soup with Thyme

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 medium potato, peeled and diced
  • 1 teaspoon fresh thyme leaves, chopped
  • 1 bay leaf
  • 4 cups vegetable broth
  • 1 tablespoon unsalted butter
  • Flaky sea salt, to taste
  • Black pepper, to taste
  • Parsley, for garnish

Method

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent, about 5 minutes.
  3. Add the sliced carrots and celery, stirring occasionally for 5 minutes.
  4. Stir in the diced potato, fresh thyme, and bay leaf, cooking for another 2 minutes.
  5. Pour in the vegetable broth, bringing the mixture to a boil.
  6. Reduce the heat to a simmer, cover, and cook for 20 minutes until the vegetables are tender.
  7. Stir in the unsalted butter and season with flaky sea salt and black pepper to taste.
  8. Remove the bay leaf and ladle the soup into bowls.
  9. Garnish with fresh parsley before serving.
