Easy Weeknight Fried Rice
This fried rice recipe is perfect for a quick and comforting family dinner during the winter months. It uses everyday ingredients to create a dish that's both hearty and delicious.
Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup frozen mixed vegetables
- 4 cups cooked rice, preferably cold
- 3 tablespoons soy sauce
- 2 large eggs, beaten
- 2 green onions, sliced
- Black pepper, to taste
Method
- Heat the vegetable oil in a large skillet over medium heat.
- Add the diced onion and cook until translucent, about 3 minutes.
- Stir in the minced garlic and frozen mixed vegetables, and cook for another 4 minutes.
- Add the cooked rice to the skillet, breaking up any clumps, and cook for 2 minutes.
- Drizzle the soy sauce over the rice, stirring well to combine and heat through.
- Push the rice to one side of the skillet and pour the beaten eggs into the space. Scramble the eggs until cooked through, then mix them into the rice.
- Season with black pepper and garnish with sliced green onions before serving.
