Easy Vegetable and Bean Soup
This easy-to-make vegetable and bean soup is perfect for a healthy summer dinner. It's packed with fresh veggies and beans, making it both nutritious and satisfying.
Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cups zucchini, diced
- 1 cup carrots, sliced
- 1 teaspoon ground cumin
- 1 can (15 oz) cannellini beans, drained and rinsed
- 4 cups vegetable broth
- Fresh cilantro, for garnish
- Salt and pepper, to taste
Method
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Stir in the zucchini, carrots, and ground cumin. Cook for another 5 minutes until the vegetables begin to soften.
- Add the cannellini beans and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 20 minutes.
- Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro.
