Easy Snickerdoodle Crumble Pie
This comforting crumble pie features the familiar flavors of classic snickerdoodles combined with a buttery crust. It's easy to make and perfect for a cozy winter treat.
Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 store-bought pie crust
Method
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, cream of tartar, salt, and 1 teaspoon of cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Place the pie crust into a 9-inch pie pan and press lightly to fit snugly.
- Spread the snickerdoodle dough evenly over the pie crust.
- Sprinkle the remaining 1 teaspoon of cinnamon evenly over the top of the dough.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and set.
- Allow to cool slightly before slicing and serving.
