Easy Grilled Chicken Salad

This grilled chicken salad is perfect for a spring dinner. It's easy to make, full of fresh vegetables, and topped with a delicious homemade vinaigrette.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup feta cheese, crumbled
  • Salt and pepper, to taste
  • Olive oil, for drizzling
  • 1 tablespoon balsamic vinegar

Method

  1. Preheat a grill or grill pan over medium-high heat.
  2. Brush the chicken breasts with olive oil and sprinkle with garlic powder, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side until fully cooked. Remove from heat and let rest for 5 minutes.
  4. Slice the chicken into strips.
  5. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and feta cheese.
  6. Top the salad with sliced chicken.
  7. Drizzle balsamic vinegar and a little olive oil over the salad, then toss gently.
  8. Serve immediately.
