Easy Grilled Chicken Salad
This grilled chicken salad is perfect for a spring dinner. It's easy to make, full of fresh vegetables, and topped with a delicious homemade vinaigrette.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/4 cup feta cheese, crumbled
- Salt and pepper, to taste
- Olive oil, for drizzling
- 1 tablespoon balsamic vinegar
Method
- Preheat a grill or grill pan over medium-high heat.
- Brush the chicken breasts with olive oil and sprinkle with garlic powder, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side until fully cooked. Remove from heat and let rest for 5 minutes.
- Slice the chicken into strips.
- In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and feta cheese.
- Top the salad with sliced chicken.
- Drizzle balsamic vinegar and a little olive oil over the salad, then toss gently.
- Serve immediately.
