Easy Chicken Noodle Soup
This comforting chicken noodle soup is perfect for a chilly winter evening. It's easy to make and full of flavor, ideal for a family dinner.
Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 cups egg noodles
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper, to taste
Method
- Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook until the vegetables are soft, about 5 minutes.
- Stir in the garlic and cook for another minute until fragrant.
- Add the chicken broth, shredded chicken, thyme, and bay leaf to the pot. Bring to a boil.
- Once boiling, add the egg noodles and reduce the heat to a simmer. Cook until the noodles are tender, about 8-10 minutes.
- Season with salt and pepper to taste. Remove the bay leaf before serving.
