Easy Baked Salmon Salad

This easy salmon salad makes for a refreshing and healthy dinner that's perfect for spring. With a hint of Thai flavors, it's sure to become a favorite weeknight meal.

Ingredients

  • 4 salmon fillets, about 6 ounces each
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 4 cups mixed salad greens
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, soy sauce, honey, and grated ginger.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the soy sauce mixture over the fillets and season with salt and pepper.
  4. Arrange the sliced red bell pepper and snap peas around the salmon on the baking sheet.
  5. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. While the salmon is baking, arrange the mixed salad greens on a large serving platter.
  7. Once the salmon and vegetables are cooked, layer them over the salad greens. Drizzle any remaining sauce from the baking sheet over the salad if desired.
