Easy Baked Salmon
This simple baked salmon is paired with autumn vegetables and a light broth for a healthy, comforting meal. It's perfect for a cozy dinner that'll warm your spirits.
Ingredients
- 4 salmon fillets, about 6 ounces each
- 2 tablespoons olive oil
- 2 cups butternut squash, peeled and cubed
- 2 cups Brussels sprouts, halved
- 1 cup low-sodium chicken broth
- 2 tablespoons unsalted butter
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
Method
- Preheat your oven to 400°F (200°C).
- Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with flaky sea salt and black pepper. Set aside.
- In a large bowl, toss the butternut squash and Brussels sprouts with the remaining 1 tablespoon of olive oil, salt, and pepper.
- Arrange the vegetables around the salmon on the baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.
- In a small saucepan over medium heat, melt the butter. Add the chicken broth and warm through.
- To serve, place the salmon and vegetables in shallow bowls and pour a little warm broth around them.
