Crispy Chicken Thighs

These crispy chicken thighs are juicy on the inside and perfectly crispy on the outside, making them a family favorite for any night of the week.

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme

Method

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels to ensure the skin becomes crispy.
  3. In a small bowl, mix together the salt, black pepper, garlic powder, smoked paprika, and dried thyme.
  4. Rub the olive oil over the chicken thighs, then sprinkle the seasoning mixture evenly over both sides of the chicken, rubbing it in gently.
  5. Heat a large oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down in the skillet.
  6. Cook for about 5 minutes without moving them, until the skin is golden brown and releases easily from the pan.
  7. Flip the chicken thighs and transfer the skillet to the preheated oven.
  8. Bake in the oven for 30-35 minutes, until the internal temperature reaches 165°F (74°C) and the skin is crisp.
  9. Remove from the oven and let rest for 5 minutes before serving.
