Creamy Weeknight Pasta

Ingredients

  • 1 pound whole wheat pasta
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 cup canned coconut milk
  • 1/2 cup nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup fresh parsley, chopped

Method

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the coconut milk and bring to a simmer. Let it cook for 3-4 minutes, allowing it to thicken slightly.
  5. Stir in the nutritional yeast, lemon juice, salt, and ground black pepper. Mix until well combined.
  6. Add the cooked pasta to the skillet and toss to coat the noodles evenly with the sauce. Cook for another 2 minutes to heat through.
  7. Garnish with fresh parsley and serve immediately.
