Ingredients
- 2 tablespoons olive oil
- 1 pound chicken breast, cut into 1-inch pieces
- 3 cloves garlic, minced
- 1 teaspoon dried Italian herbs
- 1/2 teaspoon red pepper flakes
- 1/2 cup chicken broth
- 1 1/2 cups half-and-half
- 8 ounces uncooked fettuccine
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Flaky sea salt, to taste
- Ground black pepper, to taste
Method
- In a large skillet over medium heat, heat the olive oil. Add the chicken and cook until browned and cooked through, about 6-8 minutes. Transfer to a plate and set aside.
- In the same skillet, add the garlic, dried Italian herbs, and red pepper flakes. Cook until fragrant, about 1 minute.
- Add the chicken broth and half-and-half to the skillet. Stir to combine and bring to a simmer.
- Add the fettuccine, ensuring it's submerged in the liquid. Cook according to package instructions, stirring occasionally, until pasta is al dente and the liquid has reduced and thickened.
- Stir in the Parmesan cheese until melted and combined. Add the spinach and cooked chicken, stirring until the spinach is wilted.
- Season with flaky sea salt and ground black pepper to taste. Serve hot.
