Ingredients
- 250 grams low-carb pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup chicken broth
- 1 tablespoon unsalted butter
- 1/4 teaspoon freshly ground black pepper
- Flaky sea salt, to taste
- 1 tablespoon chopped fresh parsley, for garnish
Method
- Cook the low-carb pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
- Stir in the grated Parmesan cheese, stirring continuously until the cheese is fully melted and the sauce is smooth.
- Add the butter and stir until melted. Season with black pepper and sea salt to taste.
- Add the cooked pasta to the sauce, tossing to coat evenly. Cook for 2-3 minutes, allowing the pasta to absorb some of the sauce.
- Serve hot, garnished with chopped fresh parsley.
