This creamy garlic parmesan pasta is perfect for a cozy winter evening. It's rich, satisfying, and comes together in under an hour. Ideal for those who love a bit of indulgence with their healthy eating.

Ingredients

  • 250 grams low-carb pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup chicken broth
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon freshly ground black pepper
  • Flaky sea salt, to taste
  • 1 tablespoon chopped fresh parsley, for garnish

Method

  1. Cook the low-carb pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  3. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  4. Stir in the grated Parmesan cheese, stirring continuously until the cheese is fully melted and the sauce is smooth.
  5. Add the butter and stir until melted. Season with black pepper and sea salt to taste.
  6. Add the cooked pasta to the sauce, tossing to coat evenly. Cook for 2-3 minutes, allowing the pasta to absorb some of the sauce.
  7. Serve hot, garnished with chopped fresh parsley.
