Cozy Spanish Chickpea and Vegetable Stir-Fry

Ingredients
- 2 tablespoons olive oil
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 1/2 cups canned chickpeas, drained and rinsed
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon red pepper flakes
- 1 cup vegetable broth
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, chopped
- 1 lemon, cut into wedges, for serving
Method
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced onion and sauté until it begins to soften, about 3-4 minutes.
- Add the minced garlic, red bell pepper, and zucchini to the skillet. Cook for another 5-6 minutes, stirring occasionally, until the vegetables are tender.
