Classic Savory Fried Rice

Ingredients

  • 2 tablespoons vegetable oil
  • 3 large eggs, beaten
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 4 cups cooked white rice, preferably chilled
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 4 green onions, sliced
  • Salt, to taste
  • Black pepper, to taste

Method

  1. Heat 1 tablespoon of the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the beaten eggs and cook, stirring frequently, until fully scrambled. Remove the eggs from the skillet and set aside.
  3. Add the remaining tablespoon of vegetable oil to the skillet, then add the diced onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 3 minutes.
  4. Stir in the frozen peas and carrots, cooking until they are heated through, about 3-4 minutes.
  5. Increase the heat to high and add the cooked rice to the skillet, breaking up any clumps with a spoon. Stir well to combine with the vegetables.
  6. Return the scrambled eggs to the skillet. Stir in the soy sauce and sesame oil, tossing everything to combine thoroughly.
  7. Cook for an additional 3-5 minutes, stirring frequently, until everything is heated through and the flavors meld together.
  8. Remove from heat. Stir in the sliced green onions, then season with salt and black pepper to taste before serving.
