Classic Grilled Chicken Salad

This grilled chicken salad is perfect for a cozy winter evening. With fresh ingredients and simple preparation, it’s a nourishing meal that’s both satisfying and healthy.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced cucumbers
  • 1/4 cup crumbled feta cheese

Method

  1. Preheat your grill to medium-high heat. Brush the chicken breasts with 1 tablespoon of olive oil, then sprinkle with oregano, garlic powder, salt, and pepper.
  2. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes.
  3. In a large bowl, toss the salad greens, cherry tomatoes, and cucumbers with the remaining tablespoon of olive oil.
  4. Slice the grilled chicken and place it on top of the salad. Sprinkle with crumbled feta cheese before serving.
