Classic Grilled Chicken and Vegetables

This classic grilled chicken with vegetables is perfect for a quick and healthy meal. It's straightforward and full of flavor, making it a favorite for busy weeknights or a relaxed weekend dinner.

Ingredients

  • 1 1/2 pounds boneless chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried Italian herbs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced

Method

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix the olive oil, garlic powder, dried Italian herbs, salt, and pepper.
  3. Place the chicken breasts in a large bowl and coat them with half of the olive oil mixture.
  4. In another bowl, toss the sliced vegetables with the remaining olive oil mixture.
  5. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F.
  6. Grill the vegetables for about 5 minutes, turning occasionally, until they are tender and have grill marks.
  7. Serve the grilled chicken with the vegetables on the side.
