Classic Chicken Noodle Soup
This classic chicken noodle soup is a comforting dish that's perfect for transitioning from winter to spring. It's full of flavor, easy to make, and will warm you up on a cool evening.
Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 cloves garlic, minced
- 8 cups chicken broth
- 1 1/2 cups cooked chicken, shredded
- 2 cups egg noodles
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper, to taste
- 2 tablespoons chopped fresh parsley
Method
- In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery, and cook for 5-7 minutes until the vegetables are softened.
- Add the garlic and cook for another 1 minute, stirring frequently to prevent burning.
- Pour in the chicken broth and bring to a boil. Add the shredded chicken, egg noodles, thyme, and bay leaf.
- Reduce the heat to low and simmer for 20 minutes, or until the noodles are cooked through.
- Remove the bay leaf and season with salt and pepper to taste. Stir in the fresh parsley just before serving.
