Chilled Lychee and Coconut Jelly

Ingredients

  • 1 can lychees in syrup (about 20 ounces)
  • 1 1/2 cups coconut milk
  • 1/4 cup granulated sugar
  • 2 tablespoons gelatin powder
  • 1/2 cup hot water

Method

  1. Drain the lychees, reserving the syrup. Set aside the lychees for later use.
  2. In a small bowl, combine the gelatin powder with the hot water, stirring until the gelatin has completely dissolved.
  3. In a saucepan over medium heat, combine the coconut milk, granulated sugar, and reserved lychee syrup. Stir until the sugar has dissolved, then remove from heat.
  4. Add the dissolved gelatin mixture to the coconut milk mixture, stirring well to combine.
  5. Pour the mixture into a 9x9-inch square pan. Evenly distribute the reserved lychees throughout the mixture.
  6. Refrigerate for at least 2 hours or until fully set.
  7. Once set, cut the jelly into squares and serve chilled.
