Chilled Lychee and Coconut Jelly

Ingredients
- 1 can lychees in syrup (about 20 ounces)
- 1 1/2 cups coconut milk
- 1/4 cup granulated sugar
- 2 tablespoons gelatin powder
- 1/2 cup hot water
Method
- Drain the lychees, reserving the syrup. Set aside the lychees for later use.
- In a small bowl, combine the gelatin powder with the hot water, stirring until the gelatin has completely dissolved.
- In a saucepan over medium heat, combine the coconut milk, granulated sugar, and reserved lychee syrup. Stir until the sugar has dissolved, then remove from heat.
- Add the dissolved gelatin mixture to the coconut milk mixture, stirring well to combine.
- Pour the mixture into a 9x9-inch square pan. Evenly distribute the reserved lychees throughout the mixture.
- Refrigerate for at least 2 hours or until fully set.
- Once set, cut the jelly into squares and serve chilled.
