Chilled Indian Cucumber and Yogurt Salad

This Indian-inspired cucumber and yogurt salad is a simple, no-cook dish that's perfect for keeping things light and fresh. Featuring cooling cucumbers, creamy yogurt, and a touch of spice, it's a wonderful way to celebrate the flavors of autumn without turning on the stove.

Ingredients

  • 2 large cucumbers, peeled and thinly sliced
  • 1 cup plain yogurt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cumin powder
  • 1/4 teaspoon red chili powder
  • 1/2 teaspoon salt, or to taste
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon mustard seeds
  • 2 teaspoons olive oil

Method

  1. In a large bowl, combine the sliced cucumbers and plain yogurt, mixing until evenly coated.
  2. Stir in the fresh lemon juice, cumin powder, red chili powder, and salt. Adjust seasoning to taste.
  3. In a small pan, heat the olive oil over medium heat. Add the mustard seeds and allow them to crackle for about 30 seconds.
  4. Pour the tempered mustard seeds and oil over the cucumber and yogurt mixture.
  5. Garnish with chopped fresh cilantro and serve immediately or chilled.
