Chicken Teriyaki Salad

This chicken teriyaki salad combines the rich flavors of teriyaki with fresh greens for a satisfying meal. It's perfect for a quick and healthy dinner any day of the week.

Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons mirin
  • 1 tablespoon vegetable oil
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sliced almonds
  • 1 tablespoon sesame seeds, toasted
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. In a bowl, mix the soy sauce, honey, and mirin. Add the chicken thighs and marinate for 10 minutes.
  2. Heat the vegetable oil in a skillet over medium heat. Remove the chicken from the marinade and cook for 6-8 minutes on each side until cooked through.
  3. Let the chicken rest for a few minutes, then slice it into strips.
  4. In a large bowl, combine the mixed greens, cherry tomatoes, sliced almonds, and toasted sesame seeds.
  5. Top the salad with the sliced chicken and drizzle with any remaining teriyaki sauce from the skillet.
  6. Season with flaky sea salt and black pepper to taste before serving.
