Chicken Caesar Salad with Thai Twist

This Chicken Caesar Salad gets a refreshing twist with a touch of Thai flavors. It's easy, healthy, and perfect for an autumn dinner at home.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 4 cups romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup croutons
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice

Method

  1. Preheat a grill or skillet over medium-high heat.
  2. Season the chicken breasts with olive oil, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side, or until cooked through. Remove and let rest for 5 minutes.
  4. In a large bowl, combine romaine lettuce, Caesar dressing, grated Parmesan cheese, and croutons.
  5. Slice the chicken and add to the salad. Drizzle with fish sauce and lime juice.
  6. Toss everything gently to combine and serve immediately.
