Chicken and Rice Bowl

Ingredients
- 1 tablespoon olive oil
- 1 pound boneless chicken thighs, cut into 1 inch pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup white rice
- 2 cups chicken broth
- 2 tablespoons fresh dill, chopped
- 1 lemon, sliced for garnish
Method
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken pieces, season with salt and pepper, and cook until browned, about 5 minutes.
- Add the rice to the skillet, stirring to coat in the oil and chicken juices.
- Pour in the chicken broth and bring to a simmer.
- Cover and reduce the heat to low. Cook for 15 minutes, or until the rice is tender and the chicken is cooked through.
- Stir in the fresh dill and serve with lemon slices for garnish.
