Chicken and Rice Bowl

This chicken and rice bowl is a comforting, straightforward meal perfect for any day of the week. Lightly inspired by Nordic flavors, it's nutritious and easy to prepare.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless chicken thighs, cut into 1 inch pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup white rice
  • 2 cups chicken broth
  • 2 tablespoons fresh dill, chopped
  • 1 lemon, sliced for garnish

Method

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chicken pieces, season with salt and pepper, and cook until browned, about 5 minutes.
  3. Add the rice to the skillet, stirring to coat in the oil and chicken juices.
  4. Pour in the chicken broth and bring to a simmer.
  5. Cover and reduce the heat to low. Cook for 15 minutes, or until the rice is tender and the chicken is cooked through.
  6. Stir in the fresh dill and serve with lemon slices for garnish.
